No corners were cut in taking this iconic smokehouse to Asia, where ingredients are cooked in a custom four-tonne, dual cavity oven and four elevation grills that reach more than 925°C (1,700°F). Chef Dave Pynt refers to his time working with Bittor Arguinzoniz at the iconic Asador Etxebarri, as his most formative, believing there is magic that comes from cooking with wood. The influence is evident, but this outpost absorbs the influence of its location too, with dishes on the daily changing menu that might include roasted suckling pig and a delicate ikura (salmon roe) and lime tartlet. The industrial interior comes with the requisite high ceilings and exposed beams, underscoring the restaurant brand's image of an authentic Australian barbecue house. There's a 14-seat private dining room and a cocktail bar serving culinary-inspired drinks alongside smoky bar bites and Burnt Ends classic dishes. Bookings at the restaurant fill up quickly, but walk-ins are available early in service.
