Seasonal, eco-friendly cocktails in central Paris
De Vie is an ambitious, sustainability-minded cocktail destination co-founded by Little Red Door alumni Alex Francis and Barney O'Kane. The multi-concept venue houses a seasonal fine-dining counter, led by chef Adam Purcell, called Comptoir De Vie and Bar De Vie, the cocktail bar. Both put hyper-local sourcing, strict seasonality and environmental responsibility at the absolute centre of their operational identity.
For their cocktails, in a bold albeit not unique departure from standard industry practices, Francis and O'Kane have completely eliminated water-guzzling commercial ice machines from their bar. Instead, every cocktail on the ever-evolving menu is pre-batched, pre-diluted to exact specifications with purified water and kept at precise serving temperatures to preserve flavour purity while eliminating wastage. The resulting menu is delightfully minimalist and entirely ingredient led, with each drink named simply after its key seasonal component. A summer visit might yield the refreshing Cucumber, built with freshly juiced cucumber, organic French gin and a mint liqueur and served with a granita, or the deeply complex Fig Leaf, a twist on a negroni, which pairs a wild juniper spirit with fig leaf vermouth and Alpine French bitters.
Guests can select drinks a la carte or commit to an immersive tasting experience that pairs innovative libations with seasonal bites. The bar has been such a hit that the adjoining Cave De Vie shop, which sold bottles off-premises, has been reclaimed by the bar as part of a new extension. Through its meticulous craft, zero-waste philosophy and warm hospitality, De Vie offers a standout experience.
