A new language for classic cocktails

A name that needs no introduction, Supawit 'Palm' Muttarattana announced himself on the cocktail circuit when he won Diageo World Class Thailand in 2012, followed by representing Thailand at the global competition; winning the inaugural Campari Bartender Competition Asia in 2019; and being named Bartender of the Year at the Bar Awards Bangkok 2019. In 2024 the highly awarded bartender, alongside co-founder Niwarin 'Ae' Phlainoi, went on to open Dry Wave Cocktail Studio in Bangkok's Thonglor district. A cocktail bar that has since enamoured locals and tourists alike for its understated yet highly sophisticated drinks programme and concept, Dry Wave explores the tension between the stillness of 'dry' and the movement of a 'wave', with nature, music, art and cocktails informing the space and its identity.

The drinks programme at Dry Wave centres on the idea of Super Classics, an exploration of what happens when two firmly established cocktails are brought together to create something entirely new. Rather than simply reinventing classics, this direction allows the team to identify the key characteristics of different drinks vis-a-vis their flavour structures, techniques, textures and personalities, and find a point where they can coexist in a single serve. This approach gives the menu a sense of play while demonstrating a deep understanding of cocktail history and structure. There is experimentation, but it is never for experimentation's sake; each combination is considered with balance and drinkability in mind. Dry Wave is known and loved for making the familiar feel fresh, encouraging guests to reconsider cocktails they may already know while experiencing them through Palm and the team's uniquely contemporary lens.
