Bar Nouveau

Paris

Art-inspired bar created by an industry icon

Tucked away in Paris's historic Marais district, Bar Nouveau was co-founded by twins Sara and Hadrien Moudoulaud, Marc Puzzuoli and Roku Industry Icon Award 2021 winner Rémy Savage. Passionate about art and architectural history, Savage and the team built their bar as a living homage to the Art Nouveau movement. The interior is meticulously styled to transport patrons back in time, featuring custom light fixtures that mimic organic natural forms, elegant woodwork and the world's largest private collection of antique Bimini glassware.

The venue is split across two levels, each offering a contrasting atmosphere and mixological concept. The bright, airy ground floor reimagines a classic Parisian Art Nouveau bistro from 130 years ago, focusing on pre-industrial bartending techniques and modern interpretations of French aperitifs and classic drinks, from the Fine à l'eau (cognac, verjus, sparkling water) to the Dry Martini made with a touch of vanilla eau-de-vie and olive brine.

Downstairs, guests are treated to a 90 minute, six step experience examining the relationship between nature and our post-technology present. This split-level duality gives the tightly curated menu of six cocktails a fascinating dual personality, offering both historic simplicity upstairs and forward-looking complexity downstairs. The upstairs hyper fluffy Jasmine & Vanilla Ramos, for example, becomes a cake downstairs.

Because of its diminutive size and no-reservations policy, securing a spot at Bar Nouveau requires good timing – though opening early at 3pm allows eager visitors to score a coveted daytime seat.
