A drinking room shaped by Thai flavours

From architects of spaces to architects of flavour, Taln Rojanavanich and Aum Sawaengsupt opened Bar Us in 2023, bringing their design sensibility into the world of drinks. Located in Bangkok's Sukhumvit neighbourhood, this dimly lit, atmospheric 'drinking room' approaches the cocktail bar as a space for culinary exploration, probing how the flavours, techniques and memories of Thai food can be translated into liquid form, without being predictable.

The drinks programme takes inspiration from familiar Thai culinary classics, stripping them back to their defining elements and rebuilding them through cocktails. Rather than simply replicating dishes in a glass, the focus is on extracting their essential flavours, textures and techniques, allowing ingredients more commonly associated with the kitchen to take on an entirely different role in the bar. The menu follows the structure of a meal, moving through Starter, Main and After, with each chapter offering a distinct flavour journey. Brighter, more refreshing drinks lead into richer, savoury expressions before giving way to aromatic and often dessert-leaning finishes.

Local produce is central to the philosophy, with ingredients sourced from Thai farms and treated with the same consideration a chef might give them in a kitchen. There is a particular fascination with savoury flavours, resulting in drinks that can challenge conventional ideas of what a cocktail should taste like while remaining grounded in recognisable culinary references.

The room itself reinforces this sense of discovery. Restrained and almost laboratory-like, it creates a backdrop where the drinks become the focus. At Bar Us, flavour, design, atmosphere and hospitality are considered parts of one seamless experience.
