Industry veteran and co-founder of Bangkok Bar Show Colin Chia founded Nutmeg & Clove in 2014, adding another milestone to Singapore's blooming cocktail industry. Since then, the bar has been instrumental in shaping the conversation around drinks and community, and solidifying Singapore's reputation of being one of Asia's foremost destinations for great cocktails. Its distinctly Singaporean perspective, warm hospitality and thoughtful drinks have helped give the city's cocktail culture a stronger sense of identity and purpose.

As one of Asia's most prolific bars, Nutmeg & Clove has consistently highlighted the Singapore story through its beverage programme, using the city as its starting point, exploring the country's history, culture and everyday language through cocktails. The approach is distinctly local without being constrained by nostalgia: familiar ingredients, flavours and references are translated through contemporary techniques and a modern cocktail vocabulary. Its current menu takes this a step further, drawing on Singlish as a cultural lens, with drinks built around expressions that are deeply embedded in Singaporean conversation. The result is playful and highly specific to place, but the underlying drinks remain serious pieces of cocktail craft. Across the menu, tropical fruit, spices, herbs, tea and local flavours are used with precision, while classic cocktail structures provide a recognisable framework. It is a programme that makes Singaporean identity the substance of the drink, rather than simply its garnish.

At its core, Nutmeg & Clove remains deeply rooted in Singapore, celebrating the country's identity and heritage while championing a standard of hospitality that stands confidently on the global stage.
