Bodega Kaiken
Mendoza, Argentina
This storied estate's winery may date to 1920, but Kaiken as we know it was conceived by Chilean winemaker Aurelio Montes in 2001. Today, the operation incorporates environmental practices such as drip irrigation and regenerative farming, alongside the protection of native vegetation. Tours take guests through the vineyards, winery and Cava del Ángel wine cellar, with tasting and blending experiences offering further introductions to the wines. Meanwhile, eating at Kaiken is an experience in itself: the estate's restaurant, Ramos Generales, is overseen by none other than Argentine celebrity chef and king of open‑flame cooking Francis Mallmann. Its relaxed, open-air dining space, with its chequered floors, string lights and wheat-coloured canopies, is set amid the vineyards – offering a back-to-nature backdrop to dishes such as Mendoza-style empanadas, rib-eye with chimichurri and grilled sweetbreads with humita, a traditional sweetcorn dish.
