Eliane

Brussels, Belgium

Opened in December 2024, Eliane has become one of Brussels' most exciting restaurants. Chef Kobe Desramaults (formerly of In de Wulf and Chambre Séparée), serves a tasting menu that differs day to day, allowing him to make the most of available produce. Made up of approximately 18 courses, the menu spotlights vegetables, fish and seafood, with meat used sparingly. Diners can expect creations like courgette and marigold vichyssoise with Belgian oscietra caviar, North Sea crab steamed in nasturtium served with a sabayon made from the crab's head and champagne, and raw bouquet prawns with tamari-brined tomato. There's a personal feel to Eliane: not only is it named after Desramaults' grandmother, it's also decorated in a refined yet cosy style, with rough-hewn stone floors, wooden accents and a playlist made with a carefully curated selection of vinyl.
