The atmosphere in this minimalist stone-and-wood clad sanctuary is so serene, it almost feels sacred. Situated among the leafy plane tree-lined streets of Shanghai's Former French Concession, the restaurant extends over three floors of earth tone-hued private dining rooms. Chef and founder Tony Lu celebrates the plant kingdom through an artfully presented tasting menu that showcases considerable technique, employing time-honoured preparation methods dating back to the Ming and Qing dynasties. Lu changes 40 per cent of the 11-course menu each season and works with regional farming communities to source produce, ensuring favourites remain while experimenting with new ideas and ingredients. These might include porcini mushrooms smoked in a jar or Chinese hickory wrapped in tofu skin with deep-fried jícama (a legume also known as the Mexican turnip). Thoughtful Chinese tea pairings round out the experience.
