Koan

Copenhagen, Denmark

In Zen Buddhism, the word 'koan' refers to a type of paradoxical statement or riddle – a reflection of chef Kristian Baumann's journey to uncover his South Korean heritage as an adopted child in Denmark. He undertook extensive travels to immerse himself in Korean cuisine, from street food to temples, barbecue culture to royal court cuisine and fine dining, before applying what he learned to his time in some of Scandinavia's best kitchens. Koan began as a pop-up before it opened in a permanent site in 2023, almost immediately earning two Michelin stars. There's a 17-course tasting menu (or vegetarian option) where Korean flavours meet Nordic ingredients to spectacular effect. Pair with one of the myriad drink selections, from non-alcoholic options and Korean Sool (the collective term for country's traditionally made alcohol) to prestige wines and champagnes.
