While Bottura oversees menu development, the meticulous kitchen is led by Takahiko 'Taka' Kondo, who spent 17 years at Bottura's Osteria Francescana in Modena. Seasonal highlights include a gamey smoked pork shoulder paired with sharp Campanina apple mustard, and expertly wrapped veal tortellini tossed in Parmesan cream. The tasting menu showcases the varied flavours of Tuscany across six courses, with the option to add in a plate of the kitchen's silky pappardella.
