The dish names at Florilège – for example, striped shrimp, pumpkin and the enigmatic To Balance – give very little away, but guests can expect plant-forward cooking that draws from chef Hiroyasu Kawate's experiences across France and Japan. After training in Paris and spells working in renowned Tokyo kitchens including Quintessence, where he trained under the legendary Shuzo Kishida, Kawate opened Floriège ('anthology' in French) in 2009. Located in the trendy Shibuya district of Tokyo since 2015, it features an open kitchen with a plating station that doubles as a display for lavish Japanese Ikebana floral art. Guests are comfortably seated around a family-style table surrounding the kitchen with all eyes on the chefs. For an extra-special occasion: order the beetroot flower: a candied rose arranged from petals of beets.
