Chef Francisco 'Paco' Ruano looks to decipher the flavours of his home state of Jalisco at his restaurant in the Vallarta Norte neighborhood. Ascend through the multi-storey space to the upper-level dining room decorated with coloured glass ceiling pendants, white-washed exposed brick walls and dark-toned wooden tables, all centred around an open kitchen. Ruano's Mexican cooking has a distinctive European influence given his experience at El Celler de Can Roca, Mugaritz and Noma. Alcalde's signature plates – there's an a la carte and a tasting menu – represent a mastery of the European technique of simple, yet stunning, presentation, with standouts including a sesame-encrusted disc of smoked cheese cassava on a bed of coconut mole, and a plate of crunchy churros made from sweet potato.
