At Rosetta, chef Elena Reygadas – winner of the Latin America's Best Female Chef Award 2014 – innovates traditional Mexican dishes, infusing them with Italian technique and ingredients. Reygadas' cuisine has developed and changed over the years. Having started out with a soft spot for fresh pastas and Italian-influenced recipes, her food became more Mexico-centric over time, as she extensively researched her country's culinary traditions. The focus is now on presenting traditional dishes in a new light. Crowd favourites include corn and huitlacoche tamal with smoked cream, beet risotto with radicchio and Chiapas cheese, and white mole with fermented carrots. Complete with hand-painted murals and copious greenery, the restaurant is set within a Beaux Arts mansion in Mexico City's Roma neighbourhood, offering welcome respite from the bustle outside. The bakery next door – Panadería Rosetta – has a great selection of sourdough, while partnerships with local breweries have fed into memorable drink pairings.
