Fauna
Valle de Guadalupe, Mexico

- No.17 Latin America's 50 Best Restaurants 2025
Flavours of Mexico's Guadalupe Valley on the Baja peninsula are amplified through the thoughtfully defined menu at this idyllic spot. Fauna has evolved a lot since opening in 2017: it is now part of the Bruma winery, featuring a vineyard, beautiful cellar, a bakery, vegetable and herb garden, hotel with 15 villas and a B&B with eight rooms. The timber-clad dining room is lined with floor-to-ceiling windows that open onto the restaurant's gardens, with mind-stilling views of trees and rolling hills framed by cacti. Special care is paid to preserve the environment: the restaurant has its own water treatment plant, alongside its own vegetable garden and proteins are sourced locally. Keep an eye out for dishes on chef David Castro Hussong and pastry chef Maribel Aldaco Silva's menu like rabbit and celeriac chochoyotes (dumplings), and beef tongue with sea urchin and cous cous, paired with cocktails that show just as much flair.
