Labyrinth chef Han Liguang (also known as LG Han) pushes boundaries by creating progressive Singaporean cuisine that remains faithful to the country's heritage and flavours. When he began in 2014, his techniques were driven by molecular gastronomy. Today, the former banker focuses on using the best of global produce to create familiar Singaporean flavours, calling his cooking the 'New Expression of Singaporean Cuisine'. The set menu has multiple small dishes, all of which are constantly being updated and rotated. Most of these are based on items that will trigger nostalgia among locals and Singaporean food lovers, and many are served with a side of fun and whimsy. His version of chicken rice – a dumpling stuffed with braised chicken served with a side of chicken fat roux – is a tribute to his grandmother, who used to work in a British household. Another is the abalone spaghettoni – a take on mee rebus – pairing pasta cooked with Japanese sweet potato with a slice of binchotan-grilled South African abalone.
