Mosu has been through a number of different iterations since opening in San Francisco in 2015. In 2017, the restaurant relocated to Seoul; in 2022, the chef opened a second Hong Kong location; and in 2025, after a year's closure, Mosu Seoul reopened in the vibrant Yongsan-gu neighbourhood. The restaurant's name is derived from the Korean word for the cosmos flower, a feature of chef Sung Anh's childhood garden. This nostalgic choice is a clue to the inspiration behind his dishes: think classic Korean flavours elevated with modern global techniques and stylish plating. Terse menu descriptions give little idea of the labour involved in each dish; the signature opener of burdock bark, for instance, involves coating a thinly sliced piece of burdock root with syrup, dehydrating it and repeating the process until it has acquired the requisite crispness. The expert wine matches are no less exacting.
