Cocina Hermanos Torres

Barcelona, Spain

An industrial-sized open kitchen is the centrepiece for the expansive dining room at Cocina Hermanos Torres, the restaurant run by brothers Sergio and Javier Torres. Diners get up close and personal with the cold room, meat and poultry section, and seafood and fish areas as the chefs work alongside them. Dishes on the Menú Revolución may include a riff on a traditional Catalan meat soup called escudella i carn d'olla, served with a panot de galet, a snail-shaped pasta which is transformed into an intricate cracker shaped like a Catalan tile; or cured squid, poultry consommé and caviar – a fun take on surf and turf. Make sure to leave room for desserts like the homage to cacao with myriad forms and textures, and extensive mignardises. There is no such thing as a bad seat at this culinary theatre: catch a glimpse through the glazed window into the chefs experimenting with ingredients from the R&D room, or turn towards the buzzy pastry kitchen to watch chefs tempering chocolate.
