Exquisite cuisine meets gastronomic playground at Frantzén. From humble beginnings in a Lilliputian dining room, Björn Frantzén's eponymous restaurant moved to a three-storey townhouse in Stockholm's Norrmalm district after closing in 2016. The chef is a former professional footballer who started cooking in the Swedish army before working at Chez Nico in London, Arpège in Paris and Stockholm's Edsbacka Krog, eventually co-founding the restaurant's original iteration, Frantzén/Lindeberg in 2008. The concept at Frantzén is unusual: each sitting sees 23 guests move between rooms and floors as they traverse his experiential 10-or so course menu – a journey which is replicated at sister restaurant Zén in Singapore. Guests will feel at home among the upholstery, plush carpets and warm hospitality. Expect an exciting procession of Nordic-meets-Asian food uplifted by vinegars and fermentation. Think hamachi crudo with fermented strawberry, shiso and daikon oroshi; barbecued guinea fowl with blueberries, foie gras and fermented kampot pepper jus; and melon, champagne and buckwheat tea.
