Despite the French ring to its name, Le Du's name is taken from the Thai word for 'seasons'. Unsurprisingly, seasonal Thai ingredients play a starring role here, with dishes influenced by French techniques. Founder chef Thitid 'Ton' Tassanakajohn is the young prodigy at the heart of it all: Culinary Institute of America graduate, alumni of Eleven Madison Park and Jean-Georges, and a Top Chef Thailand judge, which has furnished him with a firm following. Choose between a four or six-course tasting menu, and keep your eyes peeled for the signature khao chae, a Thai summer staple reimagined with shrimp and pork pâté, pickled radish and jasmine ice cream. Also unmissable is the kombucha pairing, which takes the edge off the heat. The space is fitted with a striking fixture that sees thousands of glass tubes filled with curated Thai seasonings suspended in curves and integrated with luminous lighting fixtures. The herbs, plants and spices are designed to emanate the changing seasons in rice plantation landscapes with fiery red chillies representing the hot season and verdant green leaves mirroring the rainy season.
