Fello, Hong Kong
Opened: August 2026
Fello presents its drinks and bar snacks in a playful nod to the fast-food dining experience
This two-storey bar in Central is a relaxed follow-up to Shelley Tai's Mius, which ranks at No.36 on The 50 Best Bars in Asia. Inspired by the word 'fellow', Tai has built a casual cocktail bar where tables are reservation-free, guests order their food and drinks at the counter, and there's the option to sit or stand across the two warmly appointed rooms. Cocktails reflect this laidback feel, with a list of familiar favourites alongside a spicy take on the paloma and a refreshing pineapple basil smash. Ahead of the opening, we spoke to the Altos Bartenders' Bartender Award winner about the five cocktails that shaped her career.
Utopic, Paris
Opened: September 2026
Oak, glass, mirrors and light create Utopic's simple, yet warm atmosphere (Image: Jacques Pépion for Moinard Bétaille)
There are two reasons to get excited about this bar: it's the brainchild of award-winning chef Anne-Sophie Pic and it sits within the Fondation Cartier. Utopic is the realisation of Pic's dream to launch a standalone bar, where mixology goes beyond food pairing – treated as an art form in itself. And what better setting than a contemporary art museum? The menu features 22 cocktail interpretations of her culinary works, including the Versant, based on a pasta dish from her Valence restaurant. Texture and aroma are front and centre, with techniques ranging from distillation to fermentation. Great food awaits too – think of a Comté croque monsieur with truffle-infused ham, and Normandy madeleines. All that in an elegant space finished in light oak and seasonally changing artwork. Chef's kiss.
Bar CC, New York
Opened: September 2026
The CC Martini is seasoned with a house-made brine of olive, piparra pepper and mignonette
Chef Melissa Rodriguez and restaurateur Jeff Katz already established their names with the Crane Club in West Chelsea. Now, the duo has partnered with the Tao Hospitality Group to launch a glamorous bar next door – enlisting Harrison Ginsberg previously of Overstory (No.33 in The 50 Best Bars North America 2026) to oversee the cocktail and 1,000-reference wine list. Draped in Art Deco finery – from embossed velvet fabric walls to tiered fringe chandeliers – the luxe venue is split across a main bar and two private dining rooms. Menu highlights include a Toasted Almond Sour, dirty-style CC Martini and a snappy menu of six bar snacks. A disco ball in the back room sets the scene for the hazy after-party.
Same Again, Bristol
Opened: January 2026
When Same Again opened earlier this year, it delivered the best-in-class bar that the West of England has long craved. Behind this cosy city-centre spot is a powerhouse duo: Pippa Guy, who in 2017 became the American Bar at The Savoy’s first female senior bartender in more than 100 years, and local veteran Sebastiano Fileccia. Its short but mighty seasonal drinks list draws on the pair’s years of expertise, seen in the margarita-adjacent Headshot, topped with a hibiscus-washed mezcal float. Not in the mood for cocktails? No problem. The bar also has one of the city’s finest champagne collections, with regular tasting events, as well as perfectly poured pints of Guinness. Add a suntrap terrace overlooking the river and it’s hard to ask for more.
Bruma, San Francisco
Opened: October 2026
A sweeping mural envelopes the space, reimagining the surrounding San Franciscan neighbourhood in a chinoiserie style
This new bar-meets-lounge at the Ritz-Carlton hotel celebrates San Francisco's geography via its cocktails. Named after the Spanish for 'mist', the menu is shaped by the city's famous fog that cloaks Nob Hill – while opulent interiors by design firm Fettle take cues from the mansion-heavy neighbourhood. Expect theatrical tableside service, from martinis chilled with liquid nitrogen to a pisco punch finished tableside with a pineapple brûlée, and live music on weekends.
Schofield's Bar, London
Opening: November 2026
Split across two levels, Schofield's Bar pairs a lively ground-floor space and terrace for casual drinks with a moody basement bar for lingering
This celebrated Manchester bar is heading south this November, bringing its classic cocktails to the cobbled streets of Covent Garden. Run by Altos Bartenders' Bartender Award 2018 winner Joe Schofield and his brother Daniel, the new site is likely to mirror the Manchester menu – serving up favourites including the negroni, old fashioned and Manhattan.
100B, Munich
Opening: November 2026
At 100B, a cocktail menu styled as a portfolio of 'liquid assets' offers martinis with theatrical flair
You can always count on Rosewood for a showstopping bar – but its hotel in Munich is going a step further this autumn, launching a standalone martini bar within its existing Bar Montez. Hidden behind a nondescript door, the speakeasy-style 100B plays on the building's life as the former headquarters of the State Bank of Bavaria – with a menu of "liquid assets" and coin-shaped garnishes. Order the timeless vesper or go all out with the punchy Champagne and Caviar Martini – just keep your order to two max.
Bartholomew's Bar, London
Opening: November 2026
Set within the newly refurbished London Museum, Bartholomew's Bar joins its many dining concepts, from an all-day diner to a gastronomic incubator
Mr Lyan Studio is a master in the mixology game, with the group's legendary bars spread across London, New York, Washington DC and Amsterdam. This autumn, its expertise lands at the London Museum's new site in Smithfield Market, launching a streetside bar named after the Bartholomew Fair – a festival that ran in the neighbourhood for centuries. The menu will change in line with the museum's rotating exhibitions, kicking off in cahoots with the London Tastes exhibition – while permanent pours include a seasonal shandy and draught London Museum lager. In true Mr. Lyan fashion, expect plenty of imagination and storytelling.
Bar Camillo, Hong Kong
Opening: November 2026
From the team behind Bar Leone, Bar Camillo will take over the former XX space within the landmark Rosewood Hong Kong
Recently crowned The World's Best Hotel for the second year running, Rosewood Hong Kong shows no signs of resting on its laurels – launching a new bar concept just months after receiving the accolade. Bar Camillo is in the very safe hands of Lorenzo Antinori and Justin Shun Wah – the duo behind the award-winning Bar Leone.
Moga, London
Opening: December 2026
More than 3,000 masu sake cups form Moga's ceiling, drawing the eye towards a sculptural natural stone bar at the centre of the space
Following last year's tragic fire at Endo at the Rotunda, renowned sushi master Endo Kazutoshi has returned to West London with a namesake 10-seat omakase restaurant and cocktail bar. The restaurant opens in October, but those without a reservation will have to wait until December to sneak upstairs to Moga, an intimate cocktail bar that channels Tokyo despite its Chelsea townhouse setting – expect a ceiling crafted from sake cups, a vinyl soundtrack amplified by custom Taguchi speakers and cocktails built around tea rituals in collaboration with Postcard Teas.
Layara, Makati
Opening: December 2026
Mandarin Oriental's long-awaited return to Manila comes with a new destination bar, set within the City of Makati. The tropical cocktail bar draws inspiration from the vast Philippine archipelago, with a seasonally changing menu showcasing ingredients from islands including Luzon and Mindanao. Expect signature serves alongside classics and Filipino small plates.
Tropicana Club, Singapore
Opening: December 2026
The Tropicana Club shows off the city's lesser-known cabaret heritage with tropical drinks inspired by Havana's glamour in the 1940s and 1950s
The Nomad brand is widely celebrated for its signature restaurants and bars – and its imminent debut in Asia is no exception. Located on Orchard Road, the Nomad Hilton Singapore is channelling Havana's legendary Tropicana Club and Singapore's very own namesake nightclub in the sixties for this new cabaret-style bar. Expect a fusion of old-school glamour, live music and classic cocktails.
Atelier Ku, Dubai
Opening: December 2026
We haven't heard the last of listening bars, with the hi-fi trend going strong into the new year. Set on the 15th floor of Emirates Financial Towers, Atelier Ku's dining room is framed by floor-to-ceiling views of the skyscraper-heavy DIFC. More impressive, it's paired with a moodier cocktail bar – equipped with high-spec MBL 101 X-Treme loudspeakers and glassware by Viennese firm J & L Lobmeyr. When it comes time for fresh air, a timber-floored terrace bridges the two spaces – complete with a roving cigar trolley.
Abstract Bistrot, Paris
Opened: October 2025
Abstract Bistrot's espresso-based Milano Torino cocktail
The latest art-themed opening from international bar magnate Remy Savage is as ultra-cool, fashionable and cutting edge as its siblings. Following the success of Abstract – a part-lab, part-vintage bistro – a Parisian offshoot opened in late 2025, tucked away on a narrow street in the 2nd Arrondissement. Inside, the venue delivers on both style and substance, with the size of the space requiring a functional bent. Savage's signature fusion of art and science is dialled in here, with 10 takes on classic cocktails made with distillates produced in-house in its mezzanine micro lab. There's a capsicum-based margarita, Martini Patissier laced with butter, rice and orange blossom, or floral chrysanthemum infused with passionfruit marigold. Order a Picon Biere for lingering over your options.
Bar None, Kuala Lumpur
Opened: December 2025
The Antipasto cocktail combines Campari, granny smith oregano soda, sweet basil and honey vermouth over crushed ice
The past five years has seen Malaysia's cocktail scene bloom into one of the region's most exciting, with 2025 bearing witness to the arrival of Bar None. Spearheaded by Malaysia-born Raz Ng – who built her name at Singapore's now-closed Sugarhall and local veteran Arsenio 'Ash' Mariano Jr – the bar tries to reclaim the idea of day-drinking through staples imbued with Malaysian flavours, living by a mantra of being "too unserious to be taken seriously". The None-tini, for example, adds preserved plums, ambarella and nutmeg to the mix, and its version of Malaysia's most famous cocktail is a must-order, listed as The Jungle Bird.
Shakerato, Amsterdam
Opened: December 2025
At Shakerato, the martini comes with a sidecar of two Dutch oysters
After two years of building work and bureaucratic hurdles, Shakerato has finally flung open its doors. From the team behind Handshake Speakeasy, named The World's Best Bar 2024, this marks the first opening from co-owner Eric van Beek on home turf. Timelessness will dictate the evening beverage programme, with each drink supercharged by van Beek's penchant for mad scientist-adjacent levels of flavour extraction through high-brow technical equipment behind the scenes. For the bar's interpretation of its namesake cocktail, the concoction is boosted with a touch of yuzu sake. For those looking to maximise their sampling of the menu in one sitting, many of the signature serves are available as miniatures.

In the decade-plus since Jigger & Pony first opened, it's become one of the Lion City's most decorated bars. The Jigger group hasn't skipped a beat since, launching Pop City late last year and the arrival of BOP scheduled for early 2026. BOP, short for Bartenders of Pony, will tap into the hospitality of Jang's home country, offering a quintessentially Korean cocktail dining experience, grounded in three guiding principles: 끼 (kki) the pursuit of excellence; 흥 (energy) and 정 (heart). Drinks are inspired by daily Korean rituals and ingredients, while the food will come from chef Jason Oh of Netflix's Culinary Class Wars fame.

From mixology heavyweight Patrick Pistolesi, the Campo Marzio bar will bring the bar's familiar Blade Runner-esque aesthetic to a larger, multi-sectioned space, with an eight-metre-long counter at the centre, flanked by marble, wood and geometric designs on the walls. Immaculately executed, accessible classics with edgy character will be the name of the game, with a special focus given to martinis.
Pearl Bar, New York
Opening: Autumn 2026
New York's Lower East Side has become a hotbed of high-profile cocktail bars, with Pearl Bar joining its ranks this year. The Japanese-style bar is a collab between ex-Eleven Madison Park bartender Richie Millwater and Toshiyuki Kubo, owner of Ark Lounge in Aomori, Japan, showcasing the duo's different approach to cocktails, but in a way that feels unique and unapologetically 'New York'. Expect a line-up of classics supercharged by Millwater's love of fermentations and advanced techniques, paired up with Kubo's exacting attention to detail.
