The late chef Bertrand Grébaut, who tragically passed away in July 2026, opened Septime in 2011. To this day, the cultish bistro sets the standard for contemporary eating in the French capital. Prior to opening his own venture, Grébaut worked at Arpège where he trained under culinary legend Alain Passard. Septime's menu is plant-forward and focused on micro-seasonality, with subtle incorporation of Asian influences that set it apart from a typical French bistro. At lunch, there's a five-course tasting menu available with an optional wine pairing, with dinner a slightly longer seven-course menu. Recent dishes include raw cuttlefish and kohlrabi with elderflower and bottarga; new potatoes with ajo blanco, acacia blossom vinegar, spider crab, sorrel, Sicilian almonds and acacia flowers; and spring vegetables in a chilled artichoke and cucumber broth with fermented cherries, feta and pine buds.
