Alain Passard is notable for actually cooking most days at Arpège, the restaurant he opened in 1986 after buying it from his mentor, Alain Senderens. He's held three Michelin stars since 1996 and been a regular on The World's 50 Best Restaurants lists. The fresh produce that forms the backbone of the dishes is harvested and delivered daily from Passard's two organic kitchen gardens just outside of Paris. Ingredients are treated like royalty and transformed into plates as pretty as Versailles. In 2001, Passard decided to up the ante and make the menu entirely vegetarian. Then, after several years of re-introducing meat and fish back to the menu, in July 2025 the chef announced Arpège would eliminate all animal products, excluding honey. The refreshed menu is once more entirely focused on seasonal fruits and vegetables: think tomatoes with orange blossom and fig leaf fragrance; aubergine with melon and lemongrass; and red rhubarb tart.
