Established in 2019 by agave enthusiasts and cocktail veterans George Kavaklis and Stelios Papadopoulos, the bar was created with a clear mission: to dismantle common misconceptions around Mexican spirits and showcase the true depth, terroir and craftsmanship of tequila and mezcal. The interior design reflects this ethos, combining modern Mexican minimalism with warm earthen tones, rustic clay finishes and custom hand-crafted ceramics that pay tribute to traditional Mexican pottery techniques.

Barro Negro's vast back bar boasts an extensive collection of artisanal tequilas, rare single-estate mezcals and lesser-known agave distillates like raicilla and sotol. The cocktail menu bridges accessible long drinks with sophisticated, spirit-forward creations. Having been designated as the world's first official Paloma Embassy, Barro Negro takes immense pride in its signature Paloma, served perfectly effervescent and ice cold. For those seeking deeper flavour complexity, options like the Los Abuelos mix blanco tequila and mezcal with olive oil, fresh lime, fennel and herbal liqueur for a surprising savoury and herbaceous serve.
