A sensory exploration beyond the drink
Gokan is a bar built around the idea that drinking can be more than just about taste and flavours. The Hong Kong venue takes its name from the Japanese kanji, meaning the five senses, and brings together cocktails, food, sound, design and service as parts of a single experience, as well as its founder, world-renowned bartender Shingo Gokan. Located in a site with a connection to Hong Kong's early ice trade, the bar also draws on its surroundings, using the building's history as a subtle layer within a contemporary setting. Its drinks are organised around five flavour profiles: sweet, sour, spicy, bitter and savoury, while the food incorporates techniques and ingredients more commonly associated with the kitchen. The result is a space where the boundaries between bar and kitchen are consciously blurred.
At its centre is Shingo Gokan, the Japanese bartender and founder of The SG Group. Gokan began bartending in Japan before moving to New York in 2006, where he spent seven years at Angel's Share and developed a style rooted in Japanese precision while absorbing the energy of the city's cocktail culture. He later established SG Group, creating a constellation of bars across several global cities and developing concepts that often pair Japanese sensibilities with local influences. His approach is less about replicating a formula from one venue to another and more about creating distinct identities, with hospitality, craftsmanship and a willingness to experiment as recurring themes across all venues. Gokan's career has also been shaped by a strong belief in collaboration, giving bartenders and creative teams ample room to interpret ideas rather than simply regurgitate them.
