Showcasing South African ingredients with wonder and flair

La Colombe

On the Pass

James Gaag

Dining among the treetops: La Colombe isn't actually in Cape Town, as such. Rather, it's a leafy, winding half-hour's drive up Constantia Nek, a mountain pass home to hiking trails, woodland and the beautifully agrarian Silvermist Wine Estate, of which the restaurant is a flagship attraction. Low-slung, glass-fronted and surrounded by lush vegetation, the building has an almost treehouse-like quality, blurring the boundary between indoors and out – a fitting prelude to a menu inspired by the ingredients and culinary traditions of the surrounding landscape.

The philosophy? As executive chef James Gaag puts it: 'Food is our theatre.' A blend of modern French technique and proudly South African ingredients – with Asian influences scattered here and there – La Colombe's cuisine is elegant, playful and visually breathtaking. Expect an intricate, beautifully plated, colour-popping parade of local seafood, indigenous herbs and seasonal vegetables, all prepared with precision and served with a side of interactive storytelling.

Scene-stealing plates: The multi-course tasting menu showcases the freshest, most flavourful ingredients the season has to offer, so it's constantly transforming. However, certain creations have proved so iconic that they've achieved near-legendary status. Take, for example, Tuna La Colombe: presented in a miniature tin, this dish of marinated raw yellowfin tuna, micro herbs and edible flowers turns the everyday act of opening a can into one of the restaurant's most unforgettable reveals.

The art of hospitality: La Colombe may have a world-class reputation, impeccably choreographed, black tie-clad waitstaff and an air of confident sophistication, but that doesn't mean dining here is ever intimidating; service is attentive and relaxed, questions are welcomed, and plenty of time is given to appreciate each course. After all, even when food's the theatre, it's the diner who should really feel like the star of the show.
